Of refined complexity: in the nose ripe fruit, cassis and raspberry, enhanced by elegant tobacco, chocolate and sweet spices. These unfold on the palate, wide and enveloping, with balanced body, noble.
Fermentation and maceration take place in steel tanks at 28-30°C for 25-28 days. This is followed by racking and malolactic fermentation at 18-20°C. The wine is then aged in French oak barrels of 225 lt and 500 lt capacity. After 24 months, the wine is bottled and then aged for a further twelve months before being put on the market.
It is a great wine that goes well with roasts, grilled meats and mature cheeses. Perfect with the traditional "Fiorentina" - or "Chianina" - steak.
